RECIPE: GROUND TURKEY WITH SALSA AND CHEESE
/I AM ALL ABOUT QUICK AND SIMPLE. BETWEEN MY FULL TIME OFFICE JOB, TEACHING FITNESS CLASSES, AND WORKING OUT I FIND MYSELF WITH VERY LIMITED TIME TO MAKE HEALTHY MEALS. WHILE MEAL PREP IS EXTREMELY IMPORTANT I MUST ADMIT I AM NOT ONE OF THOSE PEOPLE WHO SPEND THEIR ENTIRE SUNDAY MAKING 98121786173 MEALS AND SNACKS FOR THE WEEK. I DO ADMIRE ALL OF THE INSTAGRAM PICTURES OF KITCHEN COUNTERS COVERED IN TUPPER WEAR FILLED WITH COLORFUL VEGGIES AND PRECISELY MEASURED OUT CHICKEN BREAST. BUT SADLY TO SAY, I AM NOT ONE OF THOSE PEOPLE AND NOT SURE I EVER WILL BE. ONE OF MY MAIN STRUGGLES IS EATING THE SAME THING DAY AFTER DAY. BY DAY 3 I AM READY FOR SOMETHING NEW AND FIND MYSELF WASTING THIS PERFECTLY GOOD MEAL BECAUSE I JUST CANNOT CONVINCE MYSELF TO EAT IT. SOLUTION: SPEND MY LUNCH HOUR AT WORK SEARCHING FOR NEW MEAL IDEAS TO KEEP THINGS FRESH.
Ingredients:
1 package (1lb) 99% fat free ground turkey
1 small container of salsa (I used Tostito's Roasted Garlic 15.5oz)
1/2 cup fat free mozzerella cheese
Optional Ingredients:
Anything! Onions, peppers, broccoli, mushroom. Whatever you have in your fridge
Serving Size: 1 cup
Makes: 4 servings
Instructions:
Prep Time: 1 min
Cook Time: 16 min
Total Time: 17 min
Heat pan on medium heat for 1 minute
Add ground turkey, breaking it up a bit, cover and let cook for 6 minutes
Uncover, flip the turkey, break it up some more, cover and let cook for 6 minutes
Reduce heat to medium/low and add entire container of salsa, cover, cook for 2 minutes
Add cheese, cover and cook for another 2 minutes
Turn off heat. Let it cool down for a bit. Serve. Enjoy.
